From Pasture to Plate

Whole and Half Cows

Back by popular demand! We are excited to offer high-quality, pasture-raised beef directly from our 5th-generation family farm. You can purchase a whole or half cow to stock your freezer, with the benefits of cost savings, custom cuts, and supporting local farming.

We only do a limited amount of these each year!

We will start accepting deposits on our Shop Meats page on January 27 at 8AM.

THE BREAKDOWN:

  1. Hanging Weight: The price is based on the cow’s hanging weight, which is the weight of the carcass after initial processing (with bones, fat, and other trimmings). The hanging weight is typically higher than the final packaged weight.

    • Example: A 600-pound hanging weight cow might yield around 400 pounds of packaged meat (1250-1350 pounds live weight is our goal)

  2. Why Buy a Whole or Half Cow?

    • Cost savings: Save approximately 25% compared to buying smaller amounts throughout the year.

    • Custom cuts: Choose how the beef is processed.

    • Transparency: Know the beef comes from a local, family-run farm.

    • Convenience: Always have a variety of cuts on hand.

    • Support local farmers: Help sustain small-scale farming.

  3. Pricing:

    • Whole cow: $7 per pound hanging weight, plus processing fees (We use a USDA processor, Piedmont Custom Meats, and currently they are at 1.30 per pound) ($1,000 deposit, non-refundable).

      • Estimated cost: $5,000-$6,500 (about 400-450 pounds of beef).

    • Half cow: $7 per pound hanging weight, plus processing fees ($500 deposit, non-refundable).

      • Estimated cost: $2,500-$3,200 (about 200-225 pounds of beef).

  4. The Process:

    • Place a deposit to reserve your cow.

This is for Winter / Spring delivery (estimated February to June.) We will contact you once your deposit is placed and let you know where you are in line. Please remember, these are live animals so these timelines are an estimate. Our cattle go to the processor only when they are at our goal size and weight.

    • About 3 weeks before processing, finalize your cut preferences.

    • Pay the final balance after the hanging weight is verified.

    • Pick up your vacuum-sealed, labeled beef from our farm.

  5. What’s Included:

    • Steaks (ribeyes, NY strips, filets, etc.), roasts, ground beef, soup bones, and optional offal (like liver and heart).

    • Your cuts will depend on your preferences. You get to fully customize your cut sheet.

  6. Freezer Space:

    • Half cow: 9-12 cubic feet.

    • Whole cow: 16-21 cubic feet.

    • Pro tip: 30 lbs. of beef = 1 cubic foot of freezer space.

  7. How to Order:

    • Contact the farm to ask questions and place a deposit.

    • Customize your cuts before processing.

    • Pay the final balance after the hanging weight is confirmed.
